What’s Growing at ECO – Early July

Although this summer’s heatwave has been particularly intense, a bunch of our most popular crops will be ready to harvest pretty soon. The garlic, which was harvested at the end of June, is currently hanging in the shade, curing so that it will last longer before being eaten. The eggplant, growing in rows in the hoop houses, have grown immensely in a short amount of time, and will be ready by late July. The green tomatoes, which are perfect for frying, have been harvested and have reached CSA bags. Finally, the cherry tomatoes are in different stages of ripening and have hit the Farmer’s Market by the time of this blog post!
